CHOCOLATE BROWNIES Indulgent chocolate brownies you won’t want to share!
INGREDIENTS 200g (7oz) butter (chopped) 200g (7oz) dark chocolate (chopped) 4 large eggs 350g (12oz) caster sugar 115g (4oz) plain flour 56g (2oz) cocoa powder 115g (4oz) white chocolate (chopped)
Preheat the oven to 180°C/160°C fan/gas mark 4 and line a 30cm x 20cm brownie tin with baking parchment. Put butter and dark chocolate in a bowl over a pan of boiling water and melt very slowly over a low heat and leave to cool. Whisk eggs and sugar until the mixture is pale and has doubled in volume. Gently stir in the cooled chocolate. Gradually fold in the sifted flour and cocoa. Add the chopped white chocolate. Pour into lined tin and bake in a preheated oven for 35-40 minutes or until firm to the touch and a dull crust has formed. Cool in tin and when cold cut into 18 squares.
