Uncle Ray’s Rhubarb Gin An alluring pink gin with a sweet and tangy burst of rhubarb. Enjoy with plenty of ice and your favourite tonic.
INGREDIENTS 500g rhubarb (the redder the better) 1Ltr of the cheapest gin you can buy 300g sugar 1 lemon (juiced)
Firstly wash the rhubarb and chop into 1cm pieces. Put these into a 2Ltr sterilised jar along with the sugar and juice of the lemon. Pour the gin over the mixture and stir until the sugar is dissolved. Put the lid on the jar and store in a cool dark place for 4 weeks. The only thing to do now is to give the jar a shake every day for the 4 weeks, don’t worry if you forget the odd day! After a minimum of 4 weeks (if you run over by a week or two it won’t matter) strain the mixture using a muslin and bottle. Your rhubarb gin is now ready to enjoy. This recipe contains no preservatives, so it won’t last forever, but they do make fantastic gifts especially in a Kilner bottle.
