Ingredients: 450g (1lb) Mixed Dried Fruit 1 cup of hot tea 1 cup Demerara Sugar 2 cups Self Raising Flour 1 large or 2 small Eggs
1. Put dried fruit and sugar in a bowl and pour over the hot tea, stir to mix. Cover and leave overnight. 2. Preheat the oven to 350°F, 180°C, 160°C Fan or Gas Mark 4. Line a 2lb loaf tin with a paper tin liner. 3. Beat the egg and stir into the soaked fruit mixture, then pour onto the flour and mix thoroughly.
Cooking time: 1½ hours tea loaf
4. Spoon into the prepared tin and bake in the preheated oven for about 1½ hours until risen and firm to the touch. A fine skewer inserted into the centre should come out clean when ready. Cover the cake with baking parchment if browning too much.
