MIDDLE EASTERN SPICE BLEND Ingredients: 1 tablespoon Coriander Seeds* 2 tablespoons Black Peppercorns* ½ teaspoon Cloves* 2 tablespoons Cumin Seeds* 1 teaspoon Cardamom Seeds* 1 tablespoon Paprika 2 teaspoons Ground Nutmeg 2 teaspoons Chilli Flakes 1 Cinnamon Stick (broken into small pieces)
BLENDS FOR MEATS, VEGETABLES & FISH Ingredients: 2 tablespoons Coriander Seeds* ½ tablespoon Black Peppercorns* 1 tablespoons Cumin Seeds* ½ teaspoon Dried Mint* ½ Cinnamon Stick (broken into small pieces)
CAJUN SPICE BLEND
Ingredients: 1 tablespoon Cumin Seeds * 1 tablespoon Coriander Seeds * 2 teaspoons Black Peppercorns *
1 tablespoon Paprika 1 tablespoon Oregano 1 teaspoon Dried Thyme 2 teaspoons Chilli Flakes
ideally, toast seeds and peppercorns in a pan over a medium heat, shaking to avoid burning, and let them cool. *
