Ingredients 500g (17oz) Strawberries 50g (1oz) Caster Sugar 25g (0.8oz) Ground Almonds 4 teaspoons Vanilla Extract 175g (6oz) Plain flour

Serves 6. Prep/Cooking time: 40 minutes. Strawberry and Almond Crumble

1 teaspoon Baking Powder 75g (3oz) Butter (cubed) 25g (1oz) Flaked Almonds (for topping) 50g (2oz) Demerara Sugar

1. Preheat oven to 200°C/Gas 6. Place strawberries in the pie dish and sprinkle over caster sugar, vanilla and ground almonds. 2. Mix the flour and baking powder in a bowl and add butter. Rub together with hands to make a crumble and add Demerara sugar. 3. Tip on to strawberries in an even layer and press the edges with the back of a spoon. Scatter flaked almonds on top. Bake for 30 minutes until crumble is pale gold.
